ingredients
- 2 garlic cloves, chopped
- 1⁄4 teaspoon sea salt
- 1⁄8 teaspoon pepper
- 4 large eggs
- 1 cup cottage cheese
- 1 cup cooked quinoa, cooled
- 2⁄3 cup roasted red pepper, chopped
- 1⁄4 cup fresh basil, chopped
- 1⁄4 cup grated parmesan cheese
directions
- Preheat oven to 350. Spray mini muffin tins with cooking spray.
- In blender, combine garlic, salt, pepper, eggs and cottage cheese until smooth.
- Transfer to a bowl and stir in quinoa, roasted peppers, basil and Parmesan.
- Divide quinoa mixture among prepared muffin tins.
- Bake 18-23 minutes or until tops are golden.
