  • Mix the dressing ingredients and spread on one side of the flour tortilla.
  • Layer the chicken, carrots, pineapple, tomatoes, pecan pieces and lettuce in the middle of the tortilla and sprinkle with salt, pepper and red wine vinegar.
  • Fold up one end of the tortilla, then roll the sides over the chicken mixture to enclose, eat and enjoy.

  1. This was good!!! I would make it again. I didn't have mayonnaise so i used Sour cream instead also i grated the carrot. The only things i would do different would be, to use mayonnaise and maybe use crushed pineapple and drain it really well.

  3. I didn't have all ingredients on hand for this one, but I used your sauce recipe and mixed it with cubed chicken for a nice spin on chicken salad sandwiches. It was absolutely delicious! Thanks for sharing, I'll be using your recipe again!

  5. There was crunch and chunk just as the title indicates! I liked the dressing but did use less sugar and it was still sweet, it went well with the pineapples! Very Tasty! Good Luck Chef!

<p>I was born and raised in Tulsa, Oklahoma. Have lived from Arkansas to Memphis to Maine to Minnesota to Texas to CA and now Illinois since I have been married. The oldest turned 12 in Aug.'14 and the youngest was born Oct. 5, 2014. &nbsp;I taught elementary school (both public and private) for 16 years, then worked for 6 years as a principal for a private Christian school. I am now a Dyslexia Testing Specialist and Tutor in private practice and I love my work. The cookbook I have used most during my 37 years of marriage is the Better Homes and Garden New Cook Book (red and white checkered.) I still get it out frequently and several of its recipes have become regulars in my house.</p>
