Crunchy Carrot, Raisin 'n Walnut Salad

  • Mix together carrots, walnuts and raisins.
  • Combine mayonnaise, sugar and lemon juice and stir into carrot mixture.
  • Chill until ready to serve.

  2. This salad hit the spot for my lunch today, just perfect! I scaled this down for 1 person. I love the taste of the lemon with the sweetness of the sugar and the raisins. Thanks Marie, so glad I tagged this in 123Hit Wonders! ;)
     
  3. This is DH's favorite. I used Miracle Whip instead of the mayo. I put the raisins in a small amount of water and microwaved them for 1 minute to plump slightly then drained off any excess water. Other than that followed the recipe. This is a nice side dish.
     
  4. This is one of my favourite side dishes. I use low-fat plain yoghurt as a substitute for the mayonnaise.
