ingredients
- 4 crumpets
- 120 g ricotta cheese
- 250 g punnet strawberries, hulled and sliced
- 2 tablespoons of 100% fruit strawberry all-fruit spread, no added sugar
directions
- Toast the crumpets on both sides.
- Gently mix together the ricotta, strawberries and fruit spread. Place on each of the crumpets.

I really liked this! I used whole milk ricotta. I'll be trying it with part-skim next time. I put mine on lightly buttered toast, but I know I would like this on crumpets, or english muffins, or anything else like that! My 2 year old son ate his mixed with cheerios. I'm excited to try this with different fruits and matching jams also!

I made this as a simple yet special breakfast to start off 2009! One of the kids put the jar of Strawberry fruit spread in the fridge totally empty however, so I drizzled a little honey to add a bit more sweetness (no longer strawberry season for us so the berries are not that sweet) Will be adding this recipe to my keep file for the future.
