Crockpot Lemon Chicken

    lb chicken breast (I used boneless skinless)
  • 1
    (2/3 ounce) package Italian salad dressing mix
  • 2
    tablespoons butter
  • 14
    cup fresh squeezed lemon juice
  • 14
    cup chicken stock
  • cooked rice (or cooked noodles)

DIRECTIONS

  • Place chicken, Italian dressing mix, butter, lemon juice and chicken stock in crockpot.
  • Cover and cook on low 6-8 hours.
  • When finished cooking, shred chicken with two forks.
  • Serve chicken over hot cooked rice (or noodles) and top with chicken juices from crockpot.
