Crock Pot Pork Chops With Apricots and Prunes

Dried fruits, such as apricots and prunes, have a lot of iron, and the iron is more readily absorbed when combined with vitamin C. This dish has it all. A nice dish to come home to.

  • In large skillet, heat oil over medium-high heat; brown pork chops.
  • Transfer to crock pot.
  • Add onions, garlic, apricots and prunes to pork chops.
  • Whisk together orange juice, chicken stock, cumin, paprika, coriander, cinnamon, salt and pepper; add to crock pot.
  • Cover and cook on LOW for 6 to 8 hours, or until meat is tender.
  • Remove pork chops to plate and keep warm.
  • Increase heat to High; cover and cook for about 5 minutes or until sauce is slightly thickened.
  • Serve with chops.

    this was a really good recipe. I did use Pork stew meat instead of the chops. So tender. I just got an Instant Pot and used that instead of a crock pot. The recipe took 30 min. Served over Jasmine Rice with a side of broccoli. It was a hit!!

    This is a great recipe but due to lack of all the ingredients I had to modify slightly. I couldn't find apricots so substituted it with two granny smith apples, or cinnamon. I used prune juice instead of orange juice as I found the pitted prunes were already quite sweet. All in all a HUGE success and will definitely be making this again (and again, and again!!)

    This just did not taste the way I thought it would. I followed the recipe as it was written. The spices seemed to clash with the fruit.
