Crock Pot Beef Casserole

"Easy crock pot recipe that makes tender, savory chunks of beef. Recipe was included in a book that came with my crock pot. You could probably add mushrooms too. The cook time is a guess-timation. The directions actually state to cook on "auto-shift" for 6-7 hours but not all crocks have the "auto-shift" option."

  • Remove fat from meat and cut into pieces.
  • Mix flour and dry mustard together.
  • Roll meat in flour mixture.
  • Spoon into crock.
  • Mix all other ingredients and pour over meat.
  • Cook on low for 8 hours.

  1. As delicious as it is healthy. This is safe for my husband (an insulin dependent diabetic on dialysis). Fabulous flavor even without the tsp of salt. Probably takes 10 minutes from gathering the ingredients to closing the lid on the crockpot. Loved it so much, we're making it now to enjoy a 2nd night in a row.
     
  2. This was easy to put together and had a nice flavor. Cooked on high for 4-5 hours. In the end there was a bit more liquid then I wanted so I added 2 tablespoon of cornstarch. Then I served it over rice. I leave out about 3/4 cup of water the next time I make this.

  4. Normally I won't rate something if I've made signficant changes to it but I didn't change the flavor so I am going to go ahead and rate it because it turned out so well! Changes I made...#1 I pressure cooked it in 20 mins #2 I had no carrots so I used green beans #3 because I pressure cooked it I had too much liquid so I added 1/2 cup of couscous. #4 if you want to count it I used apple cider vinegar and tomato paste with water (1.5tb paste 2tb water) Turned out very yum! So simple too! Next time I will use larger cubes of meat.
     
  5. This was a hit with the whole family and they are very picky. I used a bit less water as suggested by Charlotte J and it worked perfectly. Having now dusted off my crockpot I will be making this regularly through the winter. Best of all it was so easy.
