ingredients
- 1 lb ground beef
- 1 medium onion
- 2 tablespoons prepared mustard
- 1⁄4 cup ketchup
- 1 (5 ounce) can tomato paste
- 1 (10 ounce) can chicken gumbo soup
- cooked rice, or
- cooked spaghetti
directions
- Brown beef& onion, drain.
- Stir in mustard, ketchup, tomato paste& soup.
- Simmer until mixture thickens, about 15 minutes.
- Serve over rice or spaghetti.

I've had this for lunch for several days running, served on hamburger buns rather than rice or spaghetti. It's quick and easy. I'm not usually a big fan of gumbo, but I like trying unusual combinations and this one works really well, mixed with the spiciness of the ketchup and mustard. A definite go-to dish when you need a quick pick-up meal. I'll be keeping this one, Ang!Reply

Excellent! A few simple inexpensive ingredients, quickly cooked result in a lovely comfort food that will appeal to all age groups. While the Creole connection is limited, you can add hot sauce or extra okra for a more authentic taste. We enjoyed the tang of the ketchup and mustard combined with the sweetness of the tomato paste. There was enough rice for us from the soup and we ate it without anything else. You could add some cooked veggies but comfort food doesn't need to be healthy. I made the recipe as directed adding 1 1/2 cans of water. I had some of the leftovers for breakfast and DH grabbed the rest for lunch. Thanks Ang11002 !1Reply
