ingredients
- 1 (200 g) packet tennis biscuits
- 100 g butter or 100 g margarine
- 1 (8 ounce) can condensed milk
- 1⁄2 cup fresh lemon juice
- 2 cups Cremora, powder
- 1 cup water
directions
- crush the biscuits and mix with butter to form a crumbly mixture.
- line a pie dish with the biscuit mixture and place in fridge.
- mix together the condensed milk and lemon juice.
- in a seperate bowl, whisk the cremora powder and water until thick-ish.
- combine the cremora mixture and the condensed milk mixture
- pour over biscuit base and chill for an hour.

Followed the advice from other reviewers and cut the water down to 1/2c, and made sure it was hot to melt the creamer. I subbed coconut sweetened condensed milk and it worked fine. Gluten free coconut cookies for the tennis biscuits, also worked fine (although I will try gf graham crackers in future). I ran out of lemons, so I subbed lime juice and holy crow, this was a tasty, tasty lime tart! It was like a mellower version of key lime pie, and I would emphasize that while it was good on the day I made it, it was even better the next day (plus it had firmed up a bit more). Very happy with this recipe, and happy it was able to withstand lots of subs (because gluten/dairy sensitivities, and limited access to groceries).

I use a slightly different recipe that calls for 1 cup of cream, instead of water and only one cup of cremora. Put everything together in a bowl and whisk till firm, layer and chill. Quick, easy, delicious! I also don't bother to crush the biscuits, just layer them and make multiple layers of biscuits and filling.

I used 1 cup of Cremora and substituted the 2nd cup with Regular Plain Full Cream Yoghurt which turned out tasting fantastic as it broke the extreme sweetness of the condensed milk only somewhat and complimented the rich creamy taste of the Cremora. I also used Lemon Creams instead of Tennis Biscuits as suggested by another reader, although it turned out tasty and complimented the freshly squeezed lemon juice, personally however I would rather stick with either a plain tennis biscuit crust or at most add some lemon creams to the tennis biscuits just to add that hint of lemon flavour to the crust as well, but I personally found a Lemon Cream Only crust somewhat of an overkill and a bit too sweet to my own liking although my daughter seemed not to have minded it. Thank you for sharing this delicious recipe here. It really is a classic especially with a tight budget and short notice this year on Old Christmas Eve. Happy Holidays??????????
