Cremini Mushroom Pasta With Wilted Arugula and Goat Cheese

  • Cook pasta according to package directions, but before draining, reserve 1/2 cup cooking water.
  • While the pasta is cooking, heat oil in a large skillet over medium-high heat.
  • Add mushrooms and salt and cook, stirring frequently, 2 or 3 minutes or until mushrooms are soft.
  • Add garlic and cook another 2 or 3 minutes until garlic is soft and most of the liquid has evaporated.
  • Toss pasta with mushrooms, arugula, and goat cheese. Stir in reserved cooking liquid until cheese becomes creamy. Toss in parsley and season to taste with salt and pepper.

  1. I opened my fridge and found I had to use up cremini mushrooms, goat cheese, and some arugula. This recipe could not have been more perfect to put them all into one dish. It was easy to prepare and produced a tasty dinner.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
