Creme Du Barry (Cauliflower Soup)

  • Add oil and butter to pan and heat. Add leeks and cook on low for 10 minutes.
  • Add cauliflower, potatoes and stock. Stir. Season with salt,pepper, garlic.
  • Cover and bring to a boil. Then simmer for about 20 min or until cauliflower and potatoes are soft. Cool slightly.
  • Puree in a blender or food processor until smooth. Careful! You might have to do that in batches. Return to pan and heat. Check for seasoning. You might have to add some chicken stock or milk to adjust consistency.
  • Pour into soup bowls and garnish with chopped parsley.

  2. Put lentils in as suggested but sadly it tasted of lentils rather than cauliflower. A little disappointing as I'm not overly keen on lentils but was thinking it might be healthy to throw a few in.... On the plus side I threw in some cayenne which gave it a nice bite... Will try again without the lentils next time....
     
  3. Really good. Added 1 cup of red lentils to add more proteins to the soup.
     
  4. I made this with the only alterations being that I substituted fresh minced garlic for the dried and added about an eighth of a teaspoon of cayenne, because I like a little kick and I added a sprinkle of Parmesan before serving. The soup is excellent!

  1. Healthy, easy and inexpensive ... hard to argue with qualities like that! I made 2 substitutions here: vegetable stock in place of chicken (we were having dinner with a vegetarian couple) and broccoflower instead of cauliflower. Obviously, a different taste and color (altough all thought it was a very good taste) and I will make the cauliflower version to compare and repost my review. I grew up in Germany but my background is German/Spanish/Irish/Native American. I would say my cooking style is a mix of all of them. I like to cook simple clean food. I usually don't use any packaged or processed products. Most of the time I make everything from scratch. I use only organic meat and dairy products and many other organic products and I believe it makes a big difference not only healthwise but also in taste. We have two kids. A 3 year old and a 9 year old. I try not to adapt the food for them too much. They are used to eating what we eat. Growing up I didn't really learn how to cook. At least I didn't care enough to remember anything.But living centrally in Germany I was able to travel and eat European food in it's respective Countries: Italian food in Italy, Spanish food in Spain, French food in France and so on. I really missed that when I moved to the States. I started cooking the week after I got married and have been cooking and teaching myself ever since. Now cooking is not only one of my two hobbies (photography being the other one)but I also see it as therapy. It calms me down after a stressful day, it cheers me up when I feel down and it helps me center my thoughts when I have a lot on my mind. :) Thank you so much to whoever gave me the gift of premium membership.
