Creamy Shrimp and Pasta

- 8 ounces whole wheat pasta
- 1 cup chicken broth
- 1 onion, thinly sliced
- 2 garlic cloves, minced
- 1 teaspoon thyme
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground black pepper
- 1 cup skim milk
- 3 tablespoons unbleached all-purpose flour
- 1 lb cooked shrimp, peeled and deveined
- 2 cups green beans, trimmed
- 1⁄4 cup red pepper, chopped
- kosher salt, to taste
- parmesan cheese (optional)
directions
- Prepare pasta according to package directions. In the last three minutes add green beans. Drain all together.
- Meanwhile, in a medium saucepan, combine the broth, onion, garlic, red pepper (if using fresh), thyme, salt, and black pepper. Bring to a boil over medium-high heat.
- In a measuring cup, whisk together the milk and flour until smooth. Whisk into the broth mixture. Reduce the heat to medium and cook, stirring often, for 5 minutes, or until the mixture thickens and begins to boil. Cook, stirring, for 1 minute.
- Add the shrimp (along with snow peas and roasted red peppers if you opt for the original recipe). Cook, stirring, for 3 minutes, or until the shrimp is heated through.
- Toss the pasta and bean mixture with sauce, season to taste with kosher salt, and serve immediately. Garnish with fresh parmesan cheese, if desired.

Quick and yummy. I used the green beans because thats what I had on hand but think I would have preferred the snow peas but thats a personal thing only. Over all this is a delicious recipe thats simple to make. Using thin whole wheat spaghetti make this even faster. The sauce wasn't ready yet when the pasta was.lol. This would also be great made with scallops.

Delicious -- this was wonderful and fast! The changes I made was using basil instead of thyme and using raw shrimp which I added in with the chicken broth. I also use 1 red bell pepper, chopped and less greeen beans than what was called for. Thanks for sharing this keeper which we will be having on a regular basis.

I live in Knoxville, TN with DH, my beautiful son, and the most spoiled cat on the planet! I grew up in Cincinnati and landed in TN by way of Bloomington, IN and Santa Fe, NM. Needless to say, it's been a long, strange trip!!
To explain the name: I was veg for 11 years, vegan for 1. In the last year or so I started eating poultry and fish again, but my brother-in-law's nickname for me (smelly vegetarian) has always stuck.
