Creamy, fast, easy and only one dish to wash. This is so fast to make that you can easily repeat the recipe to feed a crowd. The cooking times are approximate, check every minute to see that the eggs are done to your liking. Serve with toast and fruit on the side.

- 2 tablespoons butter or 2 tablespoons margarine
- 6 eggs
- 1⁄4 teaspoon salt
- 1 dash black pepper
- 1⁄4 cup milk
- 1 (3 ounce) package cream cheese, cut into small chunks
- finely chopped green onions or scallion
directions
- In a 1 1/2- 2 inches deep glass baking dish or casserole, melt the butter in the microwave (20 seconds, aprox.) Add the eggs, the salt and pepper and the milk. Whisk to blend well. Microwave for 1 1/2 minutes and lightly mix. Repeat once more.
- Sprinkle the cheese evenly and cook until cheese is melted and eggs are set to your liking. Remove from microwave and lightly mix. Serve hot, garnished with the green onions.

These were yummy and how easy to be able to prepare them in the microwave. I did make this lighter by using half the butter and 2/3 the cream cheese - but they were still rich and delicious. I was surprised just how well the microwave worked, and the cream cheese gave them a really nice added creaminess. I chose a 4 cup glass measuring cup, and that was good, it did bubble up quite a bit. Made a full recipe for the two of us served with toast. They even reheat beautifully (DH had his serving later, and I tasted them also). I bet this method would work even without the cream cheese (plain scrambled eggs) - I will be interested to give that a try sometime too.

I, too, was hesitant to microwave eggs, but these were far easier and fluffier than I thought. Easier clean-up than stove eggs as well. I served them on a slice of toasted rye bread to extend the NYC theme! (Used 2 eggs, for 2 people - it was plenty; my photo is what it looks like when you don't mix in the cream cheese!)
