- 2⁄3 cup brown rice
- 5 g butter
- 1 egg
- 1⁄4 cup grated parmesan cheese
- 1 lemon, juice of
- pepper
- 1⁄4 cup fresh parsley, chopped
directions
- Cook the rice for 30 minutes, until tender.
- Beat the egg and stir in the parmesan, lemon juice and pepper.
- Stir the rice into the egg and cheese mixture.
- Simmer for 5 minutes.
- Stir in chopped parsley and serve.
