ingredients

1 shallot, finely chopped
2 tablespoons Dijon mustard
2 tablespoons fresh lemon juice
¹⁄₂ cup heavy cream
1 pinch paprika
salt, to taste
black pepper, to taste

directions

place shallot, mustard and lemon juice in bowl.
season with salt and black pepper, mix well with whisk.
incorporate cream in a thin stream while whisking constantly.
add paprika, mix and correct seasoning.
serve over salad.
