Creamy Italian Rice Pudding

- 2⁄3 cup arborio rice
- 4 cups whole milk, scalded
- 8 tablespoons granulated sugar
- 6 tablespoons butter
- 1 grated lemon, zest of
- 2 teaspoons ground cinnamon
directions
- Preheat oven to 250 degrees F.
- Mix together rice, milk, sugar, butter and lemon zest and pour into a greased 4 quart casserole dish.
- Bake for 2 hours, stirring occasionally.
- Remove from oven and sprinkle with cinnamon.
- Serve warm and creamy.

I live on Central Vancouver Island with my DH who loves to eat almost anything I cook...he also likes to experiment in the kitchen and is a great baker...We have four grown children and two grandsons and love preparing dinners for our family and friends...
My biggest cooking challenge was to prepare single-handedly a buffet dinner for 75 people at my eldest son's wedding...everything turned out great and I'm glad I did it...but I don't think I will do it again...lol...alone I mean :)
