Creamy Garlic Salad Dressing

"This is a super easy salad dressing I found it in Everyday Food. It's suprisingly creamy given that there's no cream, buttermilk, or mayonaise in it. I highly recommend it. It's easily doubled or tripled as well."

• Serves: 3-4

ingredients

• 3 tablespoons olive oil
• 1 tablespoon white wine vinegar (white vinegar is fine)
• 1 tablespoon Dijon mustard
• 1 garlic clove
• fresh herb (optional)

directions

1. Mix all ingredients and stir or shake vigorously.

Very nice dressing, and no special ingredients needed. For the optional herbs, I added freshly ground black and red peppercorns. Thanks for sharing your recipe. Make for Spring PAC 2009
