Creamy Crunchy Chicken

"This is a 4 year old's delight. My daughter (and everyone else) loves this chicken. She will eat it anytime, anyplace. How can you go wrong with Ritz crackers and chicken?"

  • 4 cooked chicken breasts, diced or shredded
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 12 teaspoon lemon juice (optional)
  • 1 12 cups Ritz crackers, crushed (approx. 1 roll will be fine)
  • 14 cup butter, melted

directions

  • Preheat oven to 350 degrees.
  • Grease a medium casserole dish.
  • Mix the soup and sour cream together.
  • Add the lemon juice.
  • Add Chicken and stir well.
  • Add to the casserole dish.
  • Mix crushed crackers and butter together and put on top of the chicken.
  • Bake for 25 to 30 minutes or until chicken is bubbling and the crackers have browned.

  1. I have made this several times. I have added onion, garlic, cheese, and lemon pepper. Have also made this after browning chicken for another recipe, then deciding to make this instead. I make this about twice a month. Thanks for an easy to fix dish!
     
  2. Made this the other night and we enjoyed the rich creamy texture, but felt like it needed something more. Next time I might add the mixture to some cooked thin egg noodles and add some Mrs Dash lemon pepper.
     
  3. The family liked this and it was so easy! I didn't dice the chicken because I forgot to and just put the cooked breasts in the bottom of a casserole dish. It turned out really well. Next time, I will dice it ahead of time because our kids are small and need things cut up for them. One thing I did do that I would recommend is browning the chicken (instead of just boiling or nuking). My husband said, "It's a keeper." Thanks!
     
  4. I make this all the time. My son loves it, and so does my hubby! I am very happy to see someone else getting good use out of this recipe! :) I never have added lemon juice to this, but I think I will try it next time! ;)
     
  5. I've had this recipe in my recipe box forever, but never got around to making it. Tonight I was just wanting something easy...something 'comfort food', and this came to mind. I only used two chicken breasts, as I was just making this for me, but used the same amount of soup/sour cream. Added a handful of chopped onion, a handful of shredded cheese I had sitting around, a lot of black pepper, and used a mix of Garden Vegetable Ritz crackers and french fried onions on the top. It came out amazing! Exactly what I was wanting...perfect comfort food. Thank you for sharing this. I'm sure I'll be making this again very soon!

When I was 10 I discovered the joy of cooking on the back of a Nestle Toll house Chocolate Chip bag. It was the first recipe I ever made. I had a blast and it was a lot of fun to cook something that everyone loved. To this day, baking is one of my favorite things to do, and it shows! I can honestly say it changed my life. I earned my degree in Philosophy with a minor in Religion and English. For those of you who are interested in Astrology, I am a Pisces Dragon. A great book (did I mention that I like to read a lot?) is The New Astrology by Suzanne White. She actually sums up my life very well when she says: "Pisceans born in Dragon years will be touchy and argumentative until they finally stop trying to prove themselves. Then they will become effecient in a chosen profession, stay in a pleasant rut, and cruise around all day dreaming about what to make for dinner."
