- 1 lb shredded cooked chicken
- 1 (15 1/2 ounce) can black beans
- 1 (15 ounce) can sweet corn
- 1 (15 ounce) jar salsa, any kind but produce salsa is best
- 1 (8 ounce) package low-fat cream cheese
- 12 corn tortillas
directions
- In large pot mix all items except cream cheese and tortillas.
- Once well mixed and hot, add cream chees and let melt on top.
- Stir well and put into corn or flour tortillas.

Reviewed for PAC Fall 2008. Thank you for another good recipe, Obvious Chef! This was super easy to get onto the table on a busy evening. I served it in whole wheat tortillas with a big green salad but the kids opted to just combine everything like a big wrap or burrito. This will be making a fairly regular appearance on our dinner table.
