Creamy Cauliflower and Artichoke Salad with Parmesan Cheese

This is perfect fare for my low carb diet-Somersizing. I really have developed a passion for artichoke hearts thanks to Just Cher's Artichoke Bread. I love this because it's filling and so easy to make!

ingredients
- 5 cups cauliflower florets (about 1 medium head)
- 1 (6 1/2 ounce) jar marinated artichoke hearts
- 1⁄2 cup mayonnaise
- 1⁄2 cup sour cream
- 3⁄4 cup freshly grated parmesan cheese
- 1 cup cherry tomatoes, halved
directions
- Cook cauliflower in boiling water until crisp tender, about 4-5 minutes.
- Cool.
- Drain artichokes, reserving 2 tablespoons of the marinade.
- Cut artichokes into bite size pieces.
- In a large bowl, combine reserved artichoke marinade, mayonnaise and sour cream.
- Mix well.
- Blend in parmesan cheese.
- Add cauliflower, artichokes and cherry tomato halves.
- Toss lightly.
- Chill several hours.

Cant believe how wonderful this is. the ingredient list is not promising, but wow, it hits the spot. I add a little of the artichoke oil in with the dressing and it lifts it a bit higher stil. I have added other ingredietns to make it a "more of a meal" salad, but it just doesn't need it. However, do not try it with frozen cauliflower, the texture is all wrong.Reply

I've only tasted this slightly warm (couldn't wait) but mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm, delicious. I'm not a big fan of cauliflower or mayonnaise or sour cream, come to think of it, but this WORKED and I just know it will be a hit with our guests (and my husband, and dare I say it, our two year old as well!) Creamy and flavorful. Simple and easy to make (after the cauliflower boiling, that is). Wonderful! Edited to add: I just made this again....oh holy moly. I'm totally addicted to this. The artichoke tasted like a succulent fruit...the tomatoes were divine. The cauliflower gave it a heavenly flavor. I LOVE THIS!!! If you can wait for it to chill...it just gets better with age.Reply
