- 8 ounces cream cheese
- 1⁄2 cup powdered sugar
- 1⁄4 teaspoon vanilla extract
- 1 cup heavy cream
- 21 ounces cherry pie filling
- nuts, chopped
directions
- Mix cream cheese, sugar and vanilla with an electric mixer on medium speed until combined.
- Add the heavy cream, mix well and whip until thick.
- Use the back of a spoon and shape the cream cheese mixture into shells.
- Place on wax paper to dry.
- Freeze for 2 hours or overnight.
- When finished freezing fill clouds with cherry pie filling and top with nuts.

My daughter found this recipe in my late Mother-in-Laws recipe box. I'm certain she got it from a Philadelphia Cream cheese box. We tried it and.....well, no luck getting the heavy cream to peak. We discovered that the heavy whipping cream was at room temp and that may have effected the outcome so we ditched the 1st batch and started again later with a nice cold container of heavy whipping cream. Again...no luck getting these to set up. What in the world are we doing wrong? This is such an easy recipe.

My mom made something very similar to this, only it made 6 servings, and oh my gosh, it's amazing! Definitely not for those on a diet, but it is a great once in awhile treat. She said they were incredibly easy to make and I hope to make them at some point as well. She served it with cherry pie filling, but really, you can use any kind of pie filling you want!

This is an outstanding recipe! Very easy to prepare. You can use greased mini muffin cups to make the shells and freeze. The shells don't have to be spooned up the sides, just enough to hold the filling. Then a teaspoon or so of the cherry pie filling. It is great for serving as a small dessert for a woman's party. It is very rich for 2-4 servings.
