Cranberry Orange Pilaf

- 1 tablespoon olive oil
- 1 cup Bulgar wheat
- 1 cup dried cranberries
- lemon zest
- 2 1⁄2 cups orange juice
- 1 (10 ounce) can mandarin oranges
- 1⁄4 cup slivered almonds
- 1 teaspoon salted butter
directions
- 1. Heat heavy bottom 2 quart saucepan over medium heat for 2 minutes.Add olive oil, bulgar, and lemon zest and stir fry for one minute. Add cranberries and stir fry for one more minute.
- 2. Add juice and bring to boil over high heat. Reduce heat to low, cover and cook for 10 minutes. Remove from heat and let stand 5 minutes.
- 3. Meanwhile mix almonds with butter in a small microwave dish. Cover with plastic wrap and microwave on High power for 1 minute.
- 4. Place pilaf in bowl and stir to fluff. Top with buttery almonds.

Living in the heat of Texas can be challenging. Especially so when our motto is the spicier, the better! Getaways to more temperate weather is always a treat. We have been to Germany where all we saw to eat was sausage and bread, (not my style) Spain and Portugal where fish is king. Never in a million years did I ever think I would be able to travel to Europe.
