Cranberry Date Salad With Citrus-Honey Vinaigrette

VINAIGRETTE
- 1⁄2 cup olive oil or 1/2 cup canola oil
- 2 tablespoons fresh-squeezed limes or 2 tablespoons lemon juice
- 2 teaspoons liquid honey
- 1 1⁄2 teaspoons Dijon mustard
- salt and pepper

SALAD
- 1 cup cranberries, coarsely chopped
- 2 tablespoons granulated sugar
- 2 firm tart apples, sliced (Honey Crisp is good)
- 3 quarts romaine lettuce, torn into bite-sized pieces
- 1 1⁄2 cups pitted dates, cut into slivers
- 2⁄3 cup california walnut, toasted, chopped
- black pepper
directions
- In a jar with a tight-fitting cover, combine all vinaigrette ingredients; cover adn shake well.
- PREPARE SALAD: In a small bowl, toss cranberries with sugar; let it for 15 minutes. In another bowl, toss apple slices in 1/4 cup vinaigrette.
- In a large bowl, combine romaine, apple slices, cranberries, dates and walnuts. Refrigerate. When ready to serve, give the remaining vinaigrette another shake and drizzle over salad. Season with pepper, toss well, and transfer to a salad bowl.

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
