ingredients
- 8 ounces cottage cheese
- 1 tablespoon mustard
- 1 shallot
- 1 bunch chives
- 1⁄2 teaspoon paprika
- salt
- white pepper
directions
- Blend cottage cheese and mustard.
- Peel shallot, chop finely and mix with cottage cheese blend.
- Wash and dry the chives and snip them finely.
- Stir a/b two-thirds of the chives into cottage cheese mixture.
- Season the mixture with paprika and add salt and pepper to taste.
- Sprinkle remaining chives on top.

mmm This makes a lovely box lunch!! I made it up to take away, placed it on top of some lettuce, and added some grape tomatoes, radish, carrots, and fruit to the box. I used 1% cottage cheese. Very simple to put together and very tasty too. Nice combination of flavours, didn't have a shallot, so used a garlic clove. I will be making this again, thanks for posting.

I live in Carrot River Sk (yes the town is called carrot river) I am a full time mom of three children my son Kaleb who is four, my two daughter's Asia and Vienna- three and two in that order., and our most recent edition a 99'9% siamese kitten named Sander( my son's choice of name). I also work part time. I love looking after my flowers (which i have LOTS of) cross stitching and most outdoor activities i also do some painting and i enjoy baking or cooking.
I also love working out both cardio and weights(surprisingly i don't get enough exercise chasing my three children around). I'am getting more into the cooking now b/c of having three very big eaters, besides my husband.
