Cornish Loaf

"More of a cake really. My mum used to make this for school pack up. Its especially nice spread with some butter or with custard. You can use any dried fruit that takes your fancy."

  • Heat oven to Gas Mark 3, 160 C degrees.
  • Rub margarine into flour until mixture resembles fine breadcrumbs.
  • Add all other dry ingredients.
  • Mix eggs with milk together lightly.
  • Mix milk mixture into dry mixture.
  • Bake in 2 loaf tins for approximately 1 hour or until a knife inserted into the loaf comes out clean.

  1. I chose this recipe to try out for the Chef Alphabet Soup Game. I was probably too ambitious. I have a cooking scale, but that's just the start. I had to figure out how to convert the self-raising flour to flour plus baking powder and salt, and how to make mixed spice. I also wasn't sure if British half pints and US ones are the same or not. The batter was rather thick. It was interesting doing all the calculations, and we have a cake that we are eating, but I really wonder if it is at all similar to the one posted. Thanks anyway, for the experience.
