ingredients
- 1 lb self raising flour
- 1⁄4 lb margarine or 1/4 lb butter
- 1⁄2 lb sugar
- 1 ounce cherries
- 2 eggs
- 1⁄2 pint milk
- 1⁄2 lb dried fruit
- 2 ounces ground almonds
- 2 ounces chopped walnuts
- 1 tablespoon mixed spice
directions
- Heat oven to Gas Mark 3, 160 C degrees.
- Rub margarine into flour until mixture resembles fine breadcrumbs.
- Add all other dry ingredients.
- Mix eggs with milk together lightly.
- Mix milk mixture into dry mixture.
- Bake in 2 loaf tins for approximately 1 hour or until a knife inserted into the loaf comes out clean.

I chose this recipe to try out for the Chef Alphabet Soup Game. I was probably too ambitious. I have a cooking scale, but that's just the start. I had to figure out how to convert the self-raising flour to flour plus baking powder and salt, and how to make mixed spice. I also wasn't sure if British half pints and US ones are the same or not. The batter was rather thick. It was interesting doing all the calculations, and we have a cake that we are eating, but I really wonder if it is at all similar to the one posted. Thanks anyway, for the experience.
