Fried Egg Corned Beef Hash

- 1 large baked potato (1/4-inch dice)
- 1⁄4 cup minced onion
- 3⁄4 - 1 lb deli corned beef (sliced thick)
- 4 tablespoons butter
- 1 tablespoon garlic powder
- 1 teaspoon pepper
- 1 pinch salt
directions
- Melt butter in large frying pan over Medium heat.
- Add potatoes and onions.
- Brown, stirring occasionally.
- Add black pepper.
- While potatoes are browning, chop corned beef into 1/4" dice (or smaller).
- When potatoes are slightly brown, add corned beef, and salt.
- Raise the heat to high and saute until corned beef is slightly crisp around the edges, stirring often.
- remove from heat and serve (Top with fried egg).

Made for hubby & I this morning. Extremely easy (but I think next time I will double the potatoes, didn't seem to be enough). The smaller the cubes, the crispier they were, which was great!. Seasoning was great, also. Then adding an 'over-easy' egg to the top of each of the plates made it super yummy! Ooey - gooey good-ness! Definitely a keeper recipe. Thank you for posting. (Made for "My 3 Chefs" fall 2013)
