  • Melt butter in large frying pan over Medium heat.
  • Add potatoes and onions.
  • Brown, stirring occasionally.
  • Add black pepper.
  • While potatoes are browning, chop corned beef into 1/4" dice (or smaller).
  • When potatoes are slightly brown, add corned beef, and salt.
  • Raise the heat to high and saute until corned beef is slightly crisp around the edges, stirring often.
  • remove from heat and serve (Top with fried egg).

  1. Made for hubby & I this morning. Extremely easy (but I think next time I will double the potatoes, didn't seem to be enough). The smaller the cubes, the crispier they were, which was great!. Seasoning was great, also. Then adding an 'over-easy' egg to the top of each of the plates made it super yummy! Ooey - gooey good-ness! Definitely a keeper recipe. Thank you for posting. (Made for "My 3 Chefs" fall 2013)
