Corn Bread Taco Bake

"Easy taco bake the family enjoys. Could use a little extra spice for flavor."

• Serves: 6

ingredients

• 1 1⁄2 lbs ground beef
• 1 (1 1/4 ounce) package taco seasoning
• 1⁄2 cup water
• 1 (15 ounce) can corn, drained
• 1 (15 ounce) can stewed tomatoes
• 1⁄2 cup green pepper, . (or Black Beans) (optional)
• 1⁄2 cup grated cheese
• 1 (8 5/8 ounce) package Jiffy corn muffin mix
• 1⁄4 cup melted margarine or 1/4 cup butter

directions

1. Brown meat, drain.
2. Stir in next 4 (or 5) ingredients, bring to a boil.
3. Pour into 2 qt casserole.
4. Sprinkle with the cheese, then cover the meat & cheese with the dry muffin mix.
5. Drizzle with melted butter.
6. Bake uncovered @ 400 for 20 - 30 minutes.
