  • 1 (8 1/2 ounce) box Jiffy corn muffin mix
  • 1 egg
  • 1 (14 3/4 ounce) can creamed corn
  • 3 tablespoons butter, melted
  • 12 cup sugar

  • Preheat oven to 350 degrees. Mix all ingredients together. Bake in a greased 9x13 pan for 20-25 minute.

  1. Im making this for a taco bar and would like to make it in a crockpot without doing a water bath. Any recommendations or has anyone tried this?
     
  2. To make thicker batter, double the recipe?? Not sure if that means add two of everything or two boxes of JIFFY???

  1. This is almost like thier corn cake, however the real deal has cream and is made in a water bath in the oven. But, for what this is, it's pretty good.
     
  2. Delicious recipe! I think it comes out best baked in an 8"x8" square Fat Daddio's Brand Aluminum Pan. Adjust the baking time for this size pan to 45 minutes. (Use an oven thermometer for accurate oven temperature). The top should be golden brown and the center set completely. Test with a toothpick for doneness. If it gets too Brown during baking just cover with a sheet of aluminum foil. When it's done, Let sit for 5 minutes before serving. Freezes beautifully if you would like to make if the week before Thanksgiving. Just be sure to cool completely and wrap it tight with a double layer of plastic wrap. Thaw before serving. Can be re-heated in the microwave.
     
  3. I've made this a ton of times it's amazing! My mom used to make it when I was little (Chi chi's closed before I was born) I always called it taco corn. This is one of the best recipes out there!

  5. Excellent recipe! The only change I made was in the sugar. It's too much, and really not necessary when you're using creamed corn. It still came out just like I remembered. Thanks for sharing!!!
