ingredients
- 1 lb spaghetti
- 3⁄4 cup extra virgin olive oil
- 4 tomatoes
- 2 tablespoons fresh basil, chiffonade
- 1 tablespoon flat leaf parsley
- 1 teaspoon kosher salt
- 1 teaspoon ground pepper
- 1 teaspoon chili powder
- crushed red pepper flakes (optiona)
directions
- cook spaghetti al dente, let cool.
- place spaghetti in bowl.
- add tomatoes, olive oil and spices.
- add herbs and toss.

OMG... The day in Ohio was 103 and I was working outside and I said I am not making anything hot to eat!!! I wanted pasta and started looking for a cold pasta main dish; I found this one. It was wonderful I added some shrimp quick saute with a little hot spice rub and chilled the shrimp, added that to the recipe with a little wine vinegar and chilled the entire recipe and it was outstanding!! Thank you Chef Jeff!

Just 2 of us for this dish, so I cut it in half! Also left out the optional red pepper flakes, but otherwise the recipe was followed & the salad was very satisfying! Easy to prepare, too, which is another plus! Many thanks for sharing the recipe! [Made & reviewed for one of my adoptees in this Spring's round of Pick A Chef]
