- 2 cups cooked quinoa, chilled
- 1 small radicchio, chopped
- 1 cup cubed cooked chicken
- 1⁄2 cup cubed feta cheese
- 1 small red onion, chopped fine
- 2 tablespoons pine nuts
- 1⁄4 cup chopped fresh parsley
- olive oil, to serve
- red wine vinegar, to serve
directions
- 1.Toss cooked quinoa, chopped radicchio, cooked chicken, cubed feta cheese, chopped red onion, pine nuts and parsley together until all ingredients are well distributed.
- 2.Dress the salad with olive oil and red wine vinegar.
