  • Steam the potatoes in their skins for 30 minutes.
  • Peel them using a knife and fork.
  • Chop with a knife before mashing.
  • Mash thoroughly to remove all the lumps.
  • Add 1 stick of butter in pieces.
  • Gradually add hot milk, stirring all the time.
  • Season with a few grinds of black pepper.
  • Boil the cabbage in unsalted water until it turns a darker color.
  • Add 2 tablespoons butter to tenderize it.
  • Cover with lid for 2 minutes.
  • Drain thoroughly before returning it to the pan.
  • Chop into small pieces.
  • Put the ham in a large saucepan and cover with water.
  • Bring to the boil and simmer for 45 minutes until tender.
  • Drain.
  • Remove any fat and chop into small pieces.
  • Add cabbage, scallions, and ham to mashed potatoes, stirring them in gently.
  • Serve in individual soup plates.
  • Make an indentation on the top by swirling a wooden spoon.
  • Put 1 tablespoon of butter into each indentation.
  • Sprinkle with parsley.

  1. I made this recipe with one change: after cooking 1 package of bacon, I fried the shredded cabbage in the bacon drippings. Then I crumbled the bacon and added them to the mashers and cabbage. This was my contribution to a St Patty's Day potluck and people were scraping the bowl for more. They ate more of the colcannon than even the corned beef! Excellent recipe, thank you!
     
  2. It was so darn good! I made it for St. Patty celebration for my workplace. I made it last night and then refrigerated it. Brought it into work today and put it in a crock pot on low. Stirred every so often and it was perfect temperature for lunch. Everyone loved it. My boss asked for the recipe. I tipped him off about Recipezaar. I will make this again and again before next St. Patty!

  4. I have made this exact recipe for a couple of years now. It is wonderful! If you love mashed potatoes, cabbage and ham then you will love this dish. It only gets better as it sits overnight. I use Nueske's ham along with some of their bacon and it is outstanding.
     
  5. Colcannon is the comfort food to Ireland as Macaroni & Cheese is to the U.S. (especially down South). I saw this episode with Tyler and wrote down the recipe. I made when DH was out of town (doesn't care for cabbage), and I was in heaven. The flavors are well blended (cabbage isn't over-powering) and dish is tasty. I highly recommend everyone try it.
