Coconut Surprise Bundt Cake

One of the parent's of my mom's student gave this to her! It is so easy and it makes the cake ever! The crust is delicious! I love it with a scoop of ice cream and some of the rest of the family like it with whipped cream! Enjoy! The amount of oil, water and eggs will depend on the brand of cake mix you use, make sure you use the amount as recommended by the cake mix YOU are using!!! Cook time will also depend on the cake mix you use -- I like Betty Crocker best. Also, this needs to be cooked in a bundt pan. That way you get a really yummy crust on top.

- 1 (18 ounce) box betty crocker cake mix
- 3 eggs (per recipe instructions)
- 1 1⁄4 cups water, per recipe instructions
- 2⁄3 cup oil
- 1 can pre made cocnut pecan cake frosting
directions
- Pre-heat oven according to package directions.
- Make cake mix according to the package directions.
- After the oil, water and eggs are added, thouroughly incorporate the whole can of icing into the batter. (I do this with a mixer on low speed).
- Bake according to package directions.

I admit -- the wonderful picture that Diana #2 posted of this cake is what really got me motivated to make it -- and oh my, we sure were NOT disappointed. I used a German Chocolate cake mix and it was delicious. So moist with the wonderful addition of the coconut and pecan pieces. I served it with some vanilla ice cream. I think the next time I make it, I'm going to drizzle some chocolate glaze over the cake -- not a lot, just enough to make a special cake that much more special. I used my silicone bundt cake pan -- so lowered the baking temp to 325. It took the cake just over an hour to bake.

Who would ever think of putting the icing straight into the batter? Brilliant idea. :) The cake is moist and sooooo flavourful. You even get this 'crustlike' coating around the outside with bits of coconut and pecan pieces. Amazing. I added a dollop of Cool Whip more for the photo. It certainly doesn't need anything extra. Thanks so much SarahBeth for sending me the icing (flavour not available in Canada).
