  • Mix beer, egg, milk, flour, salt, sugar and baking powder.
  • Dredge shrimp in batter mixture then redip a second time. Roll in coconut then let rest about 10 minutes.
  • Heat oil and deep fry until golden.

    There are no instructions for where/when to add the sugar...I'm not sure I see a need for it, anyway!

    What can I use as a substitute for the beer?

    I guess no one's found a good sauce for this yet. I had fried coconut shrimp recently where it was served with a sweet and hot sauce -- something like Chinese duck sauce but with a little heat. I don't know how it's made, but it was delicious with the shrimp.
