Coconut Kau Kau

"From a old cookbook from a missionary in New Guinea. This has sweet potatoes with coconut. Looks good . If anyone know more about it I would be interested. Like what kind of cheese they use. I'm guessing like a cream cheese? These are a twice baked sweet potato."

• Ingredients: 7
• Serves: 3

ingredients

• 3 sweet potatoes
• 3 tablespoons coconut, grated
• 3 tablespoons coconut cream
• 3 teaspoons orange juice
• 50 g butter, softened
• salt
• 1⁄4 cup cheese, grated

directions

1. Wrap potatoes in foil.
2. Bake for 1 hour or until done.
3. Remove from oven.
4. Cut lengthwise.
5. Scoop out 3/4 into bowl.
6. Add all other ingredients except cheese.
7. Refill potatoes.
8. Sprinkle a little cheese on top.
9. Broil just until melted.
