  1. We loved this frosting. I left out the coconut but added coconut extract because my DD doesn't like the texture of coconut but likes the flavor so I did a little switch.   2. Perfect! I was looking for the perfect frosting to use on the perfect Key Lime Cake recipe I found and this was it! I knew I wanted a recipe that uses the fresh frozen coconut and not the dried stuff as none of us like it. I also wanted one with vanilla extract instead of coconut extract... I found the perfect cake recipe that doesn't use any jello, pudding, sour cream or yogurt... Just regular simple ingredients like milk, butter, eggs, key lime juice, etc and not anything with artificial flavoring and I wanted a coconut cream cheese frosting recipe to complement it as an alternative to the key lime cream cheese frosting recipe that the cake recipe uses as the cake has a nice tart bite like key lime pie. I wanted something sweet to balance it out, and this was perfect!
