Easiest Clam Chowder

ingredients
- 1 diced onion
- 4 tablespoons butter
- 3 small potatoes, peeled &,diced
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
- 1 can baby clams
- 3 cups milk
- 1 tablespoon cornstarch
directions
- Saute onion in butter in a heavy pot until limp.
- Add potatoes, salt, pepper& juice from clams, cover& cook for about 10 minutes or until potatoes are tender.
- Whisk corn starch in some of the milk; add clams, milk& corn starch to pot.
- Simmer until liquid thickens- do NOT boil.

Very nice, quick to make clam chowder. If you are short and time but want a homemade chowder, this is the recipe. DH especially liked it, because he doesn't like a lot of extra "stuff" (like celery, bacon, etc) in his clam chowder. I added some garlic when I sauteed the onions. For the little effort it took to make this, it's darn good! I'll be whipping this up often; thanx!

On May 1, 2008 my husband and I started a new adventure. We'll be living in a 37 foot RV while our new home is under construction. Its out in the country on a dead end dirt road with lots of trees. For the next 4 months or so, most meals will be cooked on the BBQ and life will be full of challenges!
We love spending quality time with our friends & family - especially the grandkids!! The photo is 4 generations - my 84 year old mother, myself, my daughter & my youngest granddaughter - taken at the end of 2006.
