- 1 1⁄4 cups graham cracker crumbs
- 1⁄4 cup butter
- 3 (250 g) packages cream cheese, softened
- 3⁄4 cup sugar
- 3 eggs
- 1 teaspoon lemon juice, for filling
- 1 teaspoon lemon zest, for filling
- 1 teaspoon lime juice, for filling
- 1 teaspoon lime zest, for filling
- 1 teaspoon orange juice, for filling
- 1 teaspoon orange zest, for filling
- 1 teaspoon of fresh mint, chopped, for filling
- 1 lemon, no rind, for topping
- 1 lime, no rind, for topping
- 1 orange, no rind, for topping
- handful of fresh mint, chopped, for topping
directions
- Mix together crumbs and butter.
- Press on bottom of a 9” springform pan. Set aside.
- Beat cream cheese and sugar until smooth. Add eggs, one at a time, and mix until just blended.
- Stir in remaining filling ingredients and pour mixture into crust.
- Bake at 350 degrees Fahrenheit, for 45 to 50 minutes or until center is almost set.
- Cool completely, then refrigerate for 3 hours or overnight.
- Top with thinly sliced orange, lemon and lime. Sprinkle with fresh mint.
