Citrus Brown Sugar and Bacon Baked Salmon

- 1 side salmon
- 1 teaspoon coarse salt
- two slices of thick cut bacon
- 1 small tomatoes
- 2 tablespoons light brown sugar
- 1 1⁄2 tablespoons , mccormick sweet citrus & spice salmon rub
- 2 tablespoons extra virgin olive oil
directions
- Preheat oven to 400 degrees.
- Rinse salmon and pat dry.
- Drizzle olive oil over the salmon making a light even coat.
- Sprinkle sea salt over salmon creating another light even coat.
- Sprinkle dry citrus rub over salmon creating a third light even coat.
- place salmon skin side down in nonstick broiler pan.
- Bake 20 minutes.
- While salmon is baking, brown bacon on medium high heat.
- Dice a small tomato and drain out water in mesh colander or on a paper towel.
- Remove bacon from pan and allow to drain and cool.
- Chop bacon into small bits.
- Combine bacon, chopped tomatoes, and brown sugar bu shaking gently in a ziplock bag.
- After salmon has cooked 20 minutes, spoon bacon mixture on top of salmon.
- Cook salmon and additional ten minutes or until it flakes easily with a fork.
- Serve immediately with sweet potato fries or with kale salad.
