  • Heat up the squash in a microwave and blend until smooth, creating the pureé.
  • Sift dry ingredients.
  • Mix wet ingredients.
  • Add dry mixture to wet mixture.
  • Cook like you would a regular pancake!

  1. I didn't care for it. With the rest of the batter, I'll try Roxycooks' suggestion and add some milk, but I found they didn't cook up well and had very little flavor.
     
  2. This is more like a fritter than a pancake. I was looking for more of a pancake for breakfast for my family. So here is what I did after I made one and tasted it. Add 3/4 cup milk , I used agave instead of sugar so about 4T of agave and next time I would use a bit more baking powder. You have to spead them out with a large spoon in the skillet . I used canola oil in the pan. The best topping would be cooked apples on top. If you leave it as a fritter I would put it beside ham or pork with a dolop of sour cream.
