  • Beat egg yolks and sugar with some salt until pale and thick.
  • Pour over milk, a little at the time.
  • Cook the mixture, until it coats the back of a spoon, remove from heat.
  • Pour in cream and cinnamon, whip until smooth.
  • Chill, and freeze according to manufactures instructions.
