ingredients
- 1 quart mayonnaise
- 1 cup buttermilk
- 1 cup chopped jalapeno
- 1 cup green tomatillo sauce
- 1⁄2 bunch cilantro, chopped
- 3 (1 ounce) packets dry ranch dressing mix
directions
- Mix first 5 ingredients in a blender until smooth.
- Stir in ranch mix with a whisk.
- Chill and serve.

This is NOT the original Chuy's recipe!<br/><br/>I've been trying to replicate the Chuy's recipe for years with hundreds of different combinations of certain ingredients with no luck. The unique taste mysteriously alluded me every single time, until I figured it out. The problem is that the Chuy's dip has a unique saltiness that you cannot replicate with salt, galric salt, soy sauce or fish sauce. Which led me to try and think of something along the lines of soy sauce or fish sauce that had a salty/savory quality to it without being too overpowering. The answer may come as bad news for some.<br/><br/>You are missing a few key ingredients: Fresh tomatillos, fresh squeezed lime, and...................................................MSG! Yep, sad to say, MSG is the "secret" ingredient in Chuy's creamy jalapeno dip. Which is probably why no one has figured it out by now.

I give it four stars because it's probably not actually Chuy's recipe. It does not taste exactly like Chuy's, but it's really close. I agree with other reviews that the mayo taste could be strong, but I actually cut the recipe in half to reduce the amount it made. I put a little less mayo, and a little more buttermilk than called for, because I thought it would make it lighter. I will keep playing with the recipe, substituting sour cream for at least some of the mayo. Overall, this is a great dip. I had guests this evening for burgers, and one of them used the dip as dressing on her burger. Everyone loved it.
