Christmas Cranberry Cake

"This is another great recipe from our local newspaper, A few recipe that we had been given for the Christmas season - This one is very moist and good!!"

• Ingredients: 12
• Yields: 1 loaf

ingredients

• 1 cup flour
• 1 cup graham cracker
• 1⁄2 cup brown sugar
• 2 teaspoons baking powder
• 1⁄2 teaspoon salt
• 1 cup cranberries, chopped
• 1 cup raisins
• 1⁄2 cup nutmeats, chopped
• 1 tablespoon orange rind, grated
• 1 egg, beaten
• 1 cup orange juice
• 1⁄3 cup cooking oil

directions

1. Mix first 5 ingredients together.
2. Stir in cranberrieis, raisins, nuts and orange rind.
3. Add beaten egg, orange juice, and orange rind. Stir.
4. Bake in loaf pan in 350F oven for one hour.

Made this pretty much as written but did add a slight bit more of the orange zest, & all for A GREAT TASTING DESSERT! Really enjoyed the combo of cranberries, raisins & the almonds that I used! Another time though, I'd like to make this in a Bundt pan for a more decorative & festive result! Thanks for sharing the recipe!
