Chocolate Trail Drive Cake

"This recipe has been modified from a Marlboro cook book that was from a man that had done trail drives for 60 years. On the trail you don't have milk and eggs and always some strong coffee and this recipe fits that bill. There is never any left when I take somewhere."

ingredients

  • 1 12 cups sugar, and extra sugar for the top
  • 12 cup cocoa, I like to use 1/4 cup regular cocoa and 1/4 cup dark cocoa
  • 2 teaspoons baking soda
  • 2 12 cups flour
  • 1 -2 teaspoon cinnamon, your choice
  • 1 tablespoon vanilla
  • 2 tablespoons vinegar
  • 12 cup oil
  • 2 cups cold strong coffee, stronger the better

directions

  • In 13x9 metal pan mix sugar, baking soda, cinnamon and cocoa to break up cocoa lumps then add flour.
  • Then add vanilla, coffee, oil, and vinegar and mix with fork but do not beat.
  • Sprinkle sugar, about 1/2 cup or enough to create a layer just barely white on the top. Bake at 350 about 30 minutes. Do not cover while warm or sugar topping will melt. I have tried glass pans but it does not do as well.

  1. Amazingly rich and moist -- almost like a fluffy brownie. I used the maximum amount of cinnamon and could distinctly taste the chocolate, coffee, and cinnamon flavors. I used a minimal amount of sugar topping, just 1/4 cup. I'll probably skip it next time because while the crunch is pleasant the effect is simply too sweet for my taste.
     
  2. I grew up on this cake. My mom would make it for us and is it ever good. I call my mom for recipes all the time, so this time I thought I would look to see if I could find it here and here it is. Thanks for posting it and if someone wants to try a easy, yummmmmy choc cake this is the one.

As a gardener I enjoy cooking what I grow. I have a 11 raised beds in my back yard with most of them in production based on the season and my work schedule. I like to grow different items like purple peas and rainbow swiss chard. I believe in only heirloom seeds and no hybrids and especially no GMO! Organic is a given and if I could have some animals where I live I would so I did not have to haul in "fertilizer". I make my own compost and consider my gardening as a way to work off my chocolate cake. I love trying new recipes and spices. I try to cook something from a different country every few weeks. My husband is the one that cooks the meats better than I can and I cook the deserts and breads he refuses to try. My husband takes his lunch to work and likes soup with sandwich for lunch so we make a weeks worth of soup like chicken, lentil, split pea, beef barley and freeze. We have an annual "Patriot" party for our internet friends from across the country and those around the world that can make it every spring and cook on our grill that is a former 100 gallon propane tank. Of course there is always the "blessing" of the brisket by the "special guest" and of course a variety of different foods like wheat grass juice, my version of tabbouleh with a Texas twist and homemade cream corn. Salad from the garden and my chocolate cake rounds out the meal with plenty of good conversation about keeping this country/world free from a one world government. Yes I am a little political but food is important to me and I want to be able to grow my own and not have to be dependent on corporations for my food. The fall of Rome was not due to sports but they out sourced their food and when they lost their source had none of their own. Fresh food is the real key to healthy eating. We need to take back our food supply so that we will not need to be dependent of others for our survival.
