Chocolate Toffee Crunch Cookie

"This recipe is from a Holiday Pillsbury Company coupon flier from 1986, I still have the original. There were multiple recipes but this one has been made every year since with Christmas baking. If you like toffee you will adore this. I've never had anyone not come back for more. Enjoy."

  • Cookie Base

  • 2 cups finely crushed vanilla wafers, approx. 50 wafers
  • 14 cup firmly packed brown sugar
  • 13 cup butter, melted
  • Toffee Layer

  • 12 cup butter
  • 12 cup firmly packed brown sugar
  • 1 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
  • 12 cup pecans, finely chopped


  • Cookie base: Preheat oven to 350°F In bowl combine wafer crumbs and brown sugar, stir in melted butter. Press into 13 X9 baking pan.
  • Bake for 8 minutes.
  • Toffee layer: In saucepan , combine butter and brown sugar. Cook over medium hear, stirring constantly, untill mixture comes to boil; boil 1 minute. Pour immeadiately over baked base.
  • Bake for 10 minutes.
  • Let stand 2 minutes. Sprinkle Nestle Toll House semi-sweet morsels on top. Let stand 2-3 minutes till morsels are shiny and soft; spread evenly. Sprinkle with chopped nuts.
  • Chill and either break into pieces or cut into squares.
  • Keep refrigerated.

  1. This was a snap to make, even for a cook-in-training like me! I've enjoyed these at Christmas for years, but this was the first time I'd tried making them myself : ) We will enjoy eating these with some hot cocoa when we get back from sledding tonight. Married 31 years. Live in rural area with one old mare and a small herd of Nubian dairy goats. I love cooking old favorites and trying new recipes. I try and write in my cookbooks any changes, when first tried and any other info that my daughter might enjoy later. Alot of my favorite moments center around food, holiday preparation and family time through the years. Recently my daughter has become interested in cooking more and I enjoy her new recipes and creations. My husband doesn't cook but helps in prep as directed and is the man for kitchen clean up.
