  • Mix all dry ingredient excluding brown sugar.
  • Add brown sugar.
  • Add eggs, milk, and butter.
  • Mix well.
  • Coat muffin pan with either paper liners or with butter and flour.
  • Pour batter 3/4 full in each muffin spot.
  • Bake at 325 for 35 min.

  1. Kailey's right. Woah salt. I cut it back to 1/2 teaspoon and that improves it a bunch. Otherwise pretty good recipe. I added chocolate chips to a batch and that was pretty good.
     
  2. I made this recipe twice and both times it was terrible. The first one was too buttery and the second was too salty. I would recommend cutting down on the salt and butter when you make this recipe.
     
  3. Made for Spring PAC 2013 (exactly as written). Then I got creative, wanted to see if the batter would make a cake too & the recipe met the challenge. I made 6 muffins & then put the rest of the batter in a sml tube pan that I think is really a gelatin salad mold. Both tasted great, but the muffins were ugly. I can only assume I over-filled the paper liners because the muffins looked like a volcanic eruption had struck & caused lava to flow. The cake, however, was gorgeous & enjoyed by DH, myself & a guest. Thx for sharing this recipe w/us. Yummy !! ...   4. Delicious muffins, these, & a great way to start the day (or to end it, for that matter), but that's must my chocoholic side mouthing off! A couple of friends were here the other morning, & we managed to devour all these in no time! This is certainly a keeper recipe! Thanks for sharing it!

  1. 1/2 teaspoon salt instead of 2 teaspoons, added 1/4 cup chocolate chips
