Chocolate Mousse

ingredients
- 8 ounces semisweet chocolate
- 2 tablespoons sugar
- 3 eggs, separated
- 1 teaspoon water
- 1 teaspoon instant coffee granules
- 1 tablespoon butter
directions
- Melt the chocolate with the butter, water and the coffee granules. Cool slightly.
- In a bowl, beat the egg yolks. Beat in 1 tablespoon sugar. Add to the chocolate mixture and mix well.
- In an other bowl beat egg whites until stiff peaks form. Add one tablespoon sugar and continue beating until soft peaks form. Gently add to the chocolate mixture until well combined.
- Refrigerate until ready to serve.

The first time I made this recipe my egg whites wouldn't stiffen up. So I beat them in with the chocolate mixture. The result I got wasn't mousse (and I didn't expect it to be), but it wasn't pudding either. It was just some fluffy chocolate stuff... nevertheless it was DELICIOUS fluffy chocolate stuff. The second time I made it, it was more mousse-like, but I think it kind of tasted better as "stuff." I omitted the coffee both times. Thanks Studentchef!

This recipe is both delicious and forgiving! My chocolate must have cooled too much as it was stiff and hard to fold in the egg whites - by the time they were incorporated the mixture was no longer light and fluffy (though a lot less stiff). I opted to add a few more whipped egg whites and folded those in and viola! Delicious and not a bit left after last night's dinner with friends.

This recipe should be titled "Easy Chocolate Mousse" as it is so simple to put together. I made this for Buddha, putting it all into a small bowl, but helped him eat half as it's very addicting. Yummy quick recipe, thanks for posting. NOTE: Step #3 should read gently 'fold' into the chocolate mixture. :)

I am an Israeli-Canadian who grew up in Montreal Quebec. I love to cook, especially for family and friends, and I love to experiment with recipes and try to do different variations of the same recipe. I did do part of cooking school, but found the place stressful and all the good recipes high in fat and calories, even the good ones. I don't have a fave cookbook, but I eat kosher. I have a dream and that is to own my own B&B one of these days. I also love creative writing, and maybe I like to try make up a recipe of my own and see if I'm good at doing that.
I have to add that I do have some favourite chefs from the Food Network. They are Giada De Laurentis from Everyday Italian; Micheal Smith from Chef at Home; Jamie Oliver and everything he does; Anna Olson from Sugar; and Chef Gordon Ramsey from Hells' Kitchen and Ramsey's Kitchen Nightmares.
