  • Cake: Cream together brown sugar and shortening; Add egg and vanilla.
  • Combine flour, baking sode and salt together. Add flour mixture to creamed mixture, alternately with buttermilk or sour cream, beating after each addition. Stir in rhubarb and chocolate chips.
  • Pour into a greased 9 x 13 inch baking dish.
  • Topping: Combine topping ingredients and sprinkle over the cake batter. Bake at 350 degrees F. for 45 minutes.

  1. This cake is simple to make and delicious. The topping turned out to be a bit crunchy so I think I will put a crumb or strudel topping next time.
     
  2. This cake is absolutely easy to make and delicious! As the photo shows, I meant to eat just a sliver to taste it, but kept wanting just a little more. My boyfriend loves it, too, and he is not a fan of rhubarb. The taste combo is perfectly balanced!
