Chocolate Chip Orange Muffins

"These muffins are very quick and easy to make. I have gradually reduced the oil in this recipe to 1 tbsp to have a lower fat muffin. You may want to start with more oil (2 tbsp) to find your preferred texture."

  • Mix I

  • 2 14 cups all-purpose flour
  • 2 teaspoons baking powder
  • 12 teaspoon baking soda
  • 14 teaspoon salt
  • 12 cup semi-sweet chocolate chips (or milk chocolate if you prefer)
  • Mix II

  • 34 cup sugar
  • 1 tablespoon orange peel
  • 1 cup orange juice
  • 1 cup plain 1% yogurt
  • 1 egg
  • 1 egg white
  • 1 tablespoon oil
  • 1 12 teaspoons vanilla extract

directions

  • Combine Mix I in a big bowl.
  • Combine Mix 2 in a smaller bowl and pour into the big bowl.
  • Combine the two mixes until just combined - do not over mix.
  • Bake at 375 F for 20-25 min until golden on top.

  1. I made the recipe but made only 12 muffins. I got 12 large muffins. So yummy and with almost no fat. That's great :) The orange and chocolate taste is great. I used only 1/2 cup of sugar. I used only 1 egg, no egg white. But I added a little more yogurt. I used Tropicana orange juice. Thanks Deantini :) Made for PRMR tag game
     
  2. These were a disappointment for me. I did everything according to the recipe and ended up with a batter that looked slightly too thin. Then in the oven the muffins didn't grow too much and now when they are done I'm a little skeptical about their texture. It is kind of stretchy. Are they supposed to be like this? I tried them and they're very orangy and not bad but I'm not sure if I should eat them. <br/>I wonder what I did wrong. Maybe it's the concentrate juice?
     
  3. ABSOLUTELY GREAT TASTING MUFFINS, & why not, with the combo of chocolate & orange which really gets me goin'! I did boost the amount of orange zest a bit, but other than that, followed the recipe right on down! Definitely a keeper of a recipe! [Made & reviewed in Went to the Market tag]
     
  4. I love the combination of orange and chocolate. These muffins are very moist and have a good flavor. I used the 1 T oil. The texture was different from what I am used to so I will tweak a bit next time. I filled my regular muffin pan pretty full and ended up with 13 muffins (12 in muffin pan and 1 in sili-cup).   5. Here you have a true taste winner. What a treat in the classic pairing of chocolate and orange. I used Splenda for the sugar, unsweetened oj, vanilla yogurt just because I had a little to use up and all egg white. They are simply delicious with the outside being on the crisp side and the inside being oh so tender, moist and flavorful. 20 mins was the perfect baking time with my oven set at 360F. Your first thought will be "mmmmmmm" when your first hit with the perfect amount of orange and semi sweet chocolate and your second will be to grab another before someone beats you to it!
