Add all ingredients in a mixing bowl. Blend with electric mixer until all ingredients are moist and blended. With this recipe, I sometimes add another 1/2 cup each of sugar and flour to get a thicker consistency.
Let the batter rest for about 10 minutes.
Drop by the teaspoonful onto a greased cookie sheet about 1 1/2 inches apart. Bake in a preheated oven at 375 for 7-9 minutes.
Cool for 1 minute on pan and then transfer to cooling rack to cool completely.
