ingredients
- 2 cups almond flour
- 2 tablespoons vital wheat gluten
- 3 tablespoons cocoa powder
- 2 teaspoons baking powder
- 1⁄2 cup melted butter
- 4 large eggs, lightly beaten
- 1⁄3 cup water
- 1⁄3 cup honey, plus
- 2 tablespoons honey
directions
- Preheat oven to 350 degrees.
- Mix together dry ingredients. Add wet ingredients and combine until well blended. Fill greased muffin tins about halfway and bake for 15 minutes, or until toothpick comes out clean. Enjoy!

Great healthy ingredients in these muffins and very easy to make. I liked the addition of the honey, but they lacked flavor. Maybe some cinnamon would perk them up or more vanilla extract and maybe sub the water with juice or apple sauce. Either way, they will be just fine with our morning coffee - thanks for the post. Made for Fall PAC, 2012.
